Ingredients Needed to Make Poi

Kalo or taro roots

That is all you need.

Pot for boiling the kalo roots.

Process of Making Poi

First, boil the taro root, just as you would a baked potato. Boil until soft. Make sure your taro is cooked good or it will make your throat itch.

Next, peel off the root's outer layer. Now that the taro is soft it is easier to take off the outer layer at this time.

Then, pound the taro root, using a rock, on a cutting board or a poi pounding bowl. Pound until it becomes the same consistency as glue or paste. It will be sticky. Be sure to add water while you pound.

That is it. You can eat it fresh. But, I love my poi sour and firmented. I actually put my fresh poi out on the dashboard of my car with the windows rolled up for a whole day in the sun to get "miko" or sour.
