I want to show you how to make kalua pig, also known as cooking a pig in an underground oven. It is a traditional method of cooking Hawaiian food. It is still a very common method of cooking in Hawaii today, especially in rural areas and Hawaiian Homesteads of Hawaii like Honoka'a on the Big island and 'Anahola on Kauai.

More than just baking a pig in an underground oven it is a family and friend social gathering to talk story and catch up on the newest news of the Ohana (family).

Kalua Pig Materials

Here are some materials needed to begin the Kalua pig process:

A hole (large enough to fit your pig) Chicken wire (big enough to wrap around your pig or pork butt) Banana stumps and leaves Pourous rocks (rocks with holes) Man power Kiawe Wood (also known as mesquite wood)

How to Make Kalua Pig Step #1

Gather stones. Be sure that the stones are pourous so that when it is heated up it will not blow up with the extreme heat condition it will need to endure.

Make Kalua Pig Step #2

Dig a hole. The size of the hole depends on the size of the pork you will be placing in the hole.

For example, you can make kalua pig from purchasing pork butt from the store, you can also add a whole chicken or turkey and get kalua turkey and chicken. You could also place some wrapped laulau into the imu (underground oven) and have a real feast.

Make Kalua Pig Step #3

Collect your materials. You will need to gather the following items:

1) Banana stumps and banana leaves. The amount needed is based upon the size of your hole. This material helps to keep the pig from burning on the stones and keep the heat in.

2) Chicken wire. The chicken wire is used to keep your meat pieces together and not fall in between the rocks.

3) Burlap bags or sheets

4) Barrels filled with water

6) A pig or pork butt

7) Soda can (cut in half) filled with gas.

8) Lighter

9) Kiawe wood (mesquite wood)

Cooking Kalua Pig

Now you are ready to begin the cooking process. You will need to heat your rocks, so with the soda can of gas place it in the middle of your hole. Start laying out kiawe wood, tippee style around the half cut soda can of gas. After you've layered your wood start stacking your rocks on and around your wood.

This process is called heating the oven, getting it ready to put your pig onto.

After 6 hours of burning the fire will die out and your rocks will be hot.

During your wait you can prep your pig and banans stumps. Wrap your pig with the chicken wire and clamp the ends tight.

After the fire has burnt out and the rocks are hot begin layering your banana stumps onto the hot rocks, cover every rock. Next layer the banans leaves and then place your pig, in the chicken wire, onto the pile.

Cover the pig with the damp burlap bags and or sheets. Then cover your pile with dirt. Make sure that every area is covered with dirt.

Leave the pig in the imu for 12 to 14 hours. So begin the process in the morning of the day before the party and take it out the morning of the party.

Easy Oven Kalua Pig

Put your pork butt in an oven. Salt with Hawaiian Salt Pour in liquid smoke

Bake in the oven until it's palahe or the meat can fall of the bone. Debone and serve.
